Benefits of eating fresh fruits and vegetables outweigh dangers from E.coli

St. Paul, Minn. — Although E.coli in lettuce is the culprit in the recent food-born illnesses in Minnesota, it's more commonly associated with animals than with produce.
Kevin Elfering, director of dairy and food inspection for the Minnesota Department of Agriculture says improvements in the technology of food inspection have made it easier to detect E. Coli in produce, but that's no reason to avoid the health benefits of raw fresh fruits and vegetables.
